Uncle Jeff’s Chili

Ingredients:

  • 2- 32 OZ. Beef Broth
  • 4- 15 OZ. Tomato Sauce
  • 3- Large Onions
  • 1- Head of Garlic
  • 9- Green Anaheim Chilies
  • 2- Jalapenos
  • 2 Lbs of Yellow Peruvian Dry Beans or Pinto Beans
  • 2 Lbs of Pork
  • 14 TBSP of Chili Powder
  • 2 TBSP of Cumin
  • 1 TBSP of Lawry’s Seasoned Salt
  • 2 TBSP of Garlic Powder
  • 2 Lbs Stew Beef

Directions:

  1. Use your largest pot that will hold over 1 gallon in it, pour in the beef broth and tomato sauce and all the spices. Place on low heat
  2. In next pan, pour in beans, one of the onion cut into large pieces and the garlic head that had the top cut off.
  3. Add 3 inches of water above the top of the beans and bring to a boil. As soon as it starts to boil, turn off for one hour. Resume boiling until beans are tender but not mushy. Strain off extra liquid and add beans to pot with beef broth.
