Lemon Yogurt Cake

Ingredients:

  • 2 3/4 cups flour
  • 1 cup margarine
  • 1 teaspoon vanilla
  • 1 cup plain yogurt
  • 2 teaspoons lemon peel
  • 1/2 teaspoon baking soda
  • 2 cups sugar
  • 6 eggs
  • 1/4 cups lemon juice

 

Directions:

  1. Mix dry ingredients and set aside cream butter sugar lemon  peel and vanilla
  2. Add eggs one at a time
  3. Add flour
  4. Add Yogurt and lemon juice
  5. bake for 350 degrees 50 to 55 minutes
  6. Then cool 10 minutes
  7. invert onto plate
  8. Brush cake with glaze
  9. Glaze
  10. 1/2 cups lemon juice
  11. 1/4 cup water
  12. 1/2 cup sugar
  13. combine all ingredients cook 5 minutes

 

Lemon Buddies Chex Mix

I love lemon and muddy buddies so this is something I will probably will love this. I found this in my mom’s recipe box.

  • 9 cups Rice Chex™ cereal
  • 1 ¼ cups white vanilla baking chips
  • ¼ cup butter or margarine
  • 4 teaspoons grated lemon peel
  • 2 tablespoons fresh lemon juice
  • 2 cups powdered sugar
  1. Put cereal into large bowl, set aside
  2. Microwave baking chips, butter, lemon peel and juice uncovered for 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Pour mixture over cereal, stirring until evenly coated.
  3. Pour into gallon resealable food-storage plastic bags
  4. Add powdered sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.
